Fruit Cake Muffins : INGREDIENTS
- 150 g Cake Fruit Mix
- 2 cups Water
- 2 cups Sugar
- 250 g Margarine
- 250 ml Oil
- 2 teaspoons Bicarb
- ¾ cup chopped Nuts
- 200 g whole glace Red Cherries
- 2 cups Flour
- 2 cups Chocolate FUTURELIFE® Smart food™
- 4 teaspoons Baking Powder
- ¼ teaspoons salt
- 1 heaped teaspoons Ginger
- 1 heaped teaspoons Cinnamon
- 4 Eggs beaten until foamy
- ½ cup Apple Juice
ICING
- 200 g Butter
- 250 g Icing Sugar
- 250 g Cream Cheese
- 1 teaspoon Vanilla Essence
- 1 teaspoon Lemon Juice
METHOD
- Preheat oven to 180 C.
- Place fruit mix, water, sugar, margarine and oil in a pot and boil.
- Turn down heat and simmer for 5 minutes.
- Allow to cool.
- Add the bicarb, chopped nuts and cherries and mix through.
- Sift together the flour, FUTURELIFE® Smart food™, baking powder, salt, ginger and cinnamon and stir into the fruit mixture.
- Add the beaten eggs and mix well.
- Pour mixture into greased muffin trays and bake for 40 minutes.
ICING METHOD
- Cream butter and sugar.
- Add other ingredients and blend.
